Madeleine mix contains flour, sugar, and baking powder. Separately, prepare unsalted butter, eggs, and lemon zest (to taste).


Once the ingredients are prepared, all that is left is to mix them in order. A slightly hard and chunky dough will be formed. This time, I also prepared almond slices and baked it after topping. As a side note, please note that the dough needs to be chilled in the refrigerator for about 30 minutes after mixing.





The baked madeleines are impressive for their plump shape and beautiful golden color. When you put them in your mouth, they fall apart and the rich flavors of eggs and butter spread out. They are easy to make, yet moist and rich in flavor. We recommend mixing in chocolate chips or lemon peel if you like.
