Our house has a rule like the Maritime Self-Defense Force that "Friday is the leftover curry of the refrigerator", but the secret to making any ingredient delicious is to put "well-fried onions". Ideally, you should use so-called amber onions, but you can't afford to stand on the stove for tens of minutes and always compromise on the white stage.

Let's use "frozen onions"

The trick to making it in a short time is not to use the onions as they are, but to slice them in advance and freeze them (coarse chopped is also possible). Freezing breaks the onion cells, making it easier for water and spicy ingredients to volatilize in a short period of time.


After preparing the frozen onions, add 1/2 to 1 tablespoon of oil to a frying pan, heat on high heat, add the frozen onions and fry at once.

In about 5 minutes, the water from the onions disappeared, and the whole became thick and lightly colored. Stir fry further while mixing well so as not to burn. Depending on the material of the frying pan and the heat, if it becomes scorched during the process, reduce the heat or add a small amount of water.


About 10 minutes after the start of cooking. For caramel-colored onions with a fragrant scent! You can choose how much you want to pursue the amber color in the future.


When I immediately tried using the candy-colored onions, which are delicious enough to eat as they are, for the curry, the deep richness and sweetness of the roux was added, and the curry was clearly tastier than usual!

Aside from the fact that the freezing time is short, the frozen onions themselves can be used for other dishes, so they are not wasted.
