Today (August 5th) is "Fermentation Day". Recently, I've been addicted to "Amazake" and compared it, but since it's a big deal, I arranged it for summer-like sweets. This time, we would like to introduce "Amazake Ice Cream" which is introduced on Marukome's official website.
The ingredients are 2 amazake (about 250 ml), 1 egg yolk, and 100 ml of fresh cream. For amazake, we used Marukome's "Plus Jiuqu Amazake".
Combine all ingredients, mix with a blender or mixer, transfer to a zipper bag, etc. and place in the freezer.
Loosen it by hand or mix it with a spoon every hour, and when it hardens, it's done. You can do it in no time except for the time to cool down.
The texture is sorbet-like with some crispness (maybe depending on how it is mixed in the middle). The sweetness peculiar to Jiuqu floats in the cold, and it melts and the creamy richness spreads. After eating, it is sweet and non-greasy and comfortable.
The sweetness is just right, and once you get used to this ice cream, you will feel that the usual sweets are "a little sweet". It is also recommended for people who are not good at amazake because it has no habit. If you want to refrain from sugar but want to eat sweets, or if you are tired of drinking normally, please try it ♪
