Cheese biscotti

Cheese biscotti recipe using grated cheese, which tends to be too much.

Material ( 3-4 servings )
egg 1 piece
Grated cheese 35g (1.23oz)
Panque mix 100g (3.53oz)
Walnut 40g (1.41oz)

Grated cheese that enhances the taste of pasta and salads made at home. But after using it a few times, it's forgotten in the fridge ... isn't it? Introducing "Cheese Biscotti," a handy confectionery that can consume plenty of grated cheese.

Biscotti is a cookie-like baked confectionery with a firm texture. It is common to add dried fruits and chocolate to make it sweet, but if you add grated cheese to make it salty, it will be a dish that goes well with sake. Here, I will introduce the recipe that I arranged as easily as possible.

These four materials

Ingredients: egg (1 piece) / grated cheese (35g (1.23oz)) / panque mix (100g (3.53oz)) / walnut (40g (1.41oz))

How to make:
1. Bake the walnuts in the air (about 5 minutes in an oven at 160 degrees) and crush them roughly.
2. Add grated cheese, panque mix and walnuts to the melted egg in that order and mix.
* After mixing with a rubber spatula, knead lightly by hand to combine the dough.

3. When the dough is put together, arrange it in a kamaboko shape of about 10 x 20 x 1 cm on a top plate with an oven sheet.

4. Bake in an oven warmed to 170 degrees for 20 minutes and then remove.

Once it's fluffy, take it out of the oven.

5. After slicing to a thickness of about 1 cm, place them on the top plate with the cross section facing up.
6. Bake both sides in a 160 degree oven for 10 minutes each.

After slicing, bake one side at a time to make it crispy.

It's done!

It has a light texture like rusks and the saltiness and aroma of cheese, which makes it delicious to continue eating. You can enjoy a different flavor by adding a small amount of butter or olive oil, or adding almonds instead of walnuts. Biscotti will last for a long time, so why not make a generous amount and use it for snacks and light meals?
