Tanabata is coming soon. When I went to the confectionery material specialty store "cuoca" to make some glittering sweets, I found something called "color tapioca". Most of the tapioca in milk tea is black, but there is something so colorful!
This is sold by the spice brand "GABAN" and costs 500 yen (excluding tax) with 100g (3.53oz). In addition to white, pink, blue, green, and yellow tapioca colored with gardenia pigment and cochineal pigment are mixed.
According to the product notation, boil for 1 hour to 1 and a half hours with enough heat to make tapioca dance, and then put it back in cold water. Don't forget to add water when the water runs low on the way.
The tapioca that swells to about 1 cm is transparent like a glass ball, and the texture is plump and chewy. It has almost no taste, so you can enjoy it widely by adding it to a drink or topping it with almond tofu.
Easy to put back
By the way, boiling for an hour is a lot of work (it costs gas ...). When I searched for another method, it seems that there is also a method of soaking in water for about half a day and then boiling for about 15 minutes. When I immediately tried it with tapioca soaked in water overnight, I felt that the overall feeling was even and chewy. This will lower the hurdle considerably. Color tapioca, which makes your usual dessert so cute, should be incorporated into the event!
