The crispy and fluffy texture of freshly baked cookies is irresistible... Here is a recipe for hot cookies to enjoy for breakfast or as a snack.
You will need pancake mix (100g (3.53oz)), butter (25g (0.88oz)), and milk (35ml (1.18us fl oz)). First, put the pancake mix and butter cut into small pieces in a bowl. The butter should be cold and hard.
Chop the butter finely with a fork while sprinkling it over the pancake mix, so that it resembles a smooth cheese powder. Work quickly to prevent the butter from becoming too soft.
Add the milk a little at a time and mix with a rubber spatula until combined, then wrap in plastic wrap and spread out. Fold the dough into thirds and spread it out again, then shape it into a rectangle about 2 cm thick and cut it into four equal pieces. If the dough is too sticky to handle, lightly dust with flour (not included) as needed.
Cut the dough into pieces and bake in a preheated oven or toaster oven. For the oven, the standard baking time is 10-15 minutes at 200 degrees Celsius. In this case, I used a Balmuda toaster oven and baking time was about 17 minutes at 600W. If the surface starts to brown, cover the surface with aluminum foil to adjust the browning.
The resulting hot cookies are crispy on the outside and moist on the inside. They are light and oily, so they are easy to eat. It is recommended to eat it as it is or topped with syrup or whipped cream to make a dessert. They also go well with salty foods such as bacon and cheese.
