Chinsuko-style cookies made with hot cake mix

A simple cookie recipe using a panque mix. It tastes like Okinawa's famous confectionery "Chinsuko".

Material ( 4 pieces )
Panque mix 50g (1.76oz)
Johakuto 1 tablespoon
Salad oil 1.5 tbsp

Chinsuko, a classic Okinawan souvenir confectionery. The crunchy, fluffy and unique texture and fragrant sweetness are popular.

Introducing a simple cookie recipe that resembles the taste of Chinsuko. We will introduce it in a size that you can easily try even if you live alone.

The ingredients are hot cake mix (50g (1.76oz)), sugar (1 tbsp), and salad oil (1.5 tbsp). First, put all the ingredients in a bowl and mix well until they become a lump.

Make a lump

Divide the dough into 4 equal parts and mold it into an oval shape like an elongated oval. Place on aluminum foil and bake in the oven or toaster oven. If it is an oven, it takes about 20 minutes to bake at 170 degrees. This time, I used a Balmuda toaster and baked it at 300W for about 13 minutes. It has a beautiful brown color and is ready when the surface is cracked. Freshly baked is soft and easily crumbles, so let it cool a little before transferring it to a plate.

For baked with rough cracks on the surface

The finished cookie has a crunchy and crispy texture. It crumbles in your mouth in a blink of an eye and spreads a moderate amount of sweetness. Since the dough has a lot of oil, it has a richness like karinto and donuts, and it is quite satisfying to eat. You can enjoy a different flavor by changing the white sugar to brown sugar or adding cocoa powder.
